Pepsinogen
Pepsinogen, which is synthesized by the main cells of the acid-secreting glands, is transformed into pepsin by the action of hydrochloric acid (HCL) or pepsin, which is already active in the lumen of the stomach, and breaks down proteins into fat, peptone and a few peptides. The optimum pH for the enzyme action is 2. After entering the small intestine, the enzyme activity is lost.
